Tofu scramble is a staple for just about every vegan. If there was an orientation when you go vegan it would be the first part. It’s also a meal that is starting to catch on with many non-vegans since it has a similar taste and texture to scrambled eggs and just about the same amount of protein per serving without any of the cholesterol or saturated fat.
Making tofu scramble is relatively simple, the only ingredients that are absolutely required are the tofu itself, turmeric, salt, and pepper. Beyond the tofu and turmeric it is really up to you what you would like to add. I usually go with a mixture of smoked paprika, nutritional yeast, cumin, garlic salt, and for veggies I like to add spinach, diced red onions, shiitake mushrooms, and diced red bell pepper.
The first time I made this recipe for my parents, my step dad was shocked. He really thought he was eating scrambled eggs. In fact most of my friends who have tried it usually remark about how much more approachable veganism is then they realized since there are still options to have many similar foods.
For this recipe I wanted to show one of the simplest ways to make tofu scramble to show how easy it really can be to people who are interested in either becoming vegan, or just making a few changes in their diet to be healthier. One package of tofu firm or extra firm
Veggies of your choice (we used red pepper and spinach)
1/2 Tsp Turmeric
1/2 Tsp Smoked Paprika
1/2 Tsp Nutritional Yeast
1 Tsp Salt
1/4 Tsp Pepper
1. Remove tofu from package and drain
2. Preheat pan (add oil optional)
3. Crumble tofu into pan
4. Add seasonings and stir as it heats up
5. Stir and add in veggies and cook for another couple of minutes
